One great example is its collaboration with a local quinoa producer: Kontichse Korrel. Their fields are located close to Campus Drie Eiken. We spoke to both <a href=\"https:\/\/www.uantwerpen.be\/en\/staff\/magali-hiel\/\" target=\"_blank\" rel=\"noreferrer noopener\">Magali Hiel<\/a>, coordinator at komida, and <a href=\"https:\/\/www.kontichsekorrel.be\/contact-1\" target=\"_blank\" rel=\"noreferrer noopener\">Diane Van Hul<\/a>, owner of Kontichse Korrel.<\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Local quinoa on your plate<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Why do you choose to work with local products?<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Magali: \u2018Local products fit perfectly within our <strong>sustainability vision<\/strong>. By choosing short supply chains, we reduce transport distances and lower our environmental impact. Local products are also often fresher and more flavourful. At the same time, we support local farmers and contribute to a fair food chain.\u2019<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>How did this collaboration come about?<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Magali: Kontichse Korrel uses <strong>fields on Campus Drie Eiken<\/strong>. We got in touch through a professor. As there\u2019s a connection with our own campus, this collaboration made perfect sense for both parties.\u2019<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">What does this mean in practice for the way you work?<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Magali: \u2018We think it\u2019s particularly valuable to <strong>offer a local product while also supporting a local organisation<\/strong>. The collaboration runs smoothly thanks to short communication lines, reliable deliveries and mutual trust.\u2019<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">From field to plate: the grower\u2019s story<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>How did you start growing quinoa?<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Diane: \u2018We were looking for <strong>a crop that suits our climate <\/strong>while also responding to the growing <strong>demand for sustainable, plant-based food<\/strong>. Quinoa proved to be an interesting option. In addition to quinoa, we grow other crops at Kontichse Korrel, including mustard and poppy seed. <strong>We don\u2019t use pesticides or artificial fertilisers.<\/strong>\u2019<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Why do you choose to produce quinoa locally?<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Diane: \u2018Much of the quinoa sold in shops comes from far away, usually South America. That results in a fresher product with more flavour and a <strong>smaller ecological footprint<\/strong>.\u2019<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>What does a growing season look like?<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Diane: \u2018Quinoa is sown in spring and harvested in August. During the growing season, it\u2019s important to monitor the crop closely, but we don\u2019t intervene.\u2019<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>What challenges do you face?<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Diane: \u2018The Belgian climate remains a challenge. Quinoa also requires specific knowledge and care because it\u2019s not a traditional crop. Some years are more difficult than others. Wet years lead to heavy weed pressure, extra work and lower-quality harvests. Even so, we remain firmly committed to growing our crops without spraying, despite the impact this has on yields. <strong>We\u2019re fully committed to producing pure, natural and healthy products<\/strong>.\u2019<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>What does the collaboration with the university mean to you?<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Diane: \u2018It\u2019s a major added value for us. It adds extra texture and crunch to our dishes. In the new academic year, we want to explore new and creative ways of incorporating quinoa into our range.\u2018<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>How do students and staff respond?<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Magali: \u2018Positively. We see that sustainability is becoming increasingly important to both students and staff. Every choice, no matter how small, can have a positive impact. That is why sustainability criteria are also included in our procurement procedures.\u2018<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Do local products outweigh concerns about price and availability?<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Magali: \u2018Local products can sometimes have a higher purchase price, but they generally offer higher quality in return. At komida, we always strive for the <strong>best balance between price and quality<\/strong>.\u2019<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Did you know?<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"has-medium-font-size\">Quinoa isn\u2019t a grain but a seed.<\/li>\n\n\n\n<li class=\"has-medium-font-size\">Quinoa is rich in protein (16%) and fibre, much more so than rice, wheat or spelt.<\/li>\n\n\n\n<li class=\"has-medium-font-size\">Quinoa contains all essential amino acids, making it ideal for muscle development.<\/li>\n\n\n\n<li class=\"has-medium-font-size\">Quinoa is naturally gluten-free.<\/li>\n\n\n\n<li class=\"has-medium-font-size\">Quinoa has a low glycaemic index, which helps support stable blood sugar levels and provides a lasting feeling of fullness.<\/li>\n\n\n\n<li class=\"has-medium-font-size\">Quinoa contributes to a healthy gut microbiome, helps maintain healthy cholesterol levels <em>and<\/em> reduces stress.<\/li>\n\n\n\n<li class=\"has-medium-font-size\">Quinoa is well suited to dry conditions.<\/li>\n\n\n\n<li class=\"has-medium-font-size\">Quinoa originally comes from South America but is adapting increasingly well to our climate.<\/li>\n\n\n\n<li class=\"has-medium-font-size\">Belgian quinoa requires five times less water than Peruvian quinoa.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Small choices, big impact<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">With this collaboration, komida wants to show that <strong>sustainable choices are both achievable <em>and<\/em> make a difference<\/strong>.
